It happened—it’s not even October yet and I’ve already broken out my stash of googly-eye sprinkles.
And speaking of life goals…guys, let’s make some truffles. Top five reasons I love truffles:
1. Delicious
2. Cute (especially if you have googly-eye sprinkles on hand)
3. Easy to make
You could add a stick and turn these into truffle pops too (just like cake pops).

First, make and freeze a No-Bake Oreo Cheesecake or any boxed no-bake dessert that you can find at your local grocery store. Up to you. Choose your own adventure here.
Next, melt some chocolate chips with 2 teaspoons of oil (olive or canola is great) in a microwave-safe bowl in the microwave. Do this on high in 30 second increments, stirring in between, just until it’s melted (1 1/2 to 2 minutes total usually).
Now you can use a melon baller to scoop small spheres of frozen cheesecake and cover in chocolate. Then add your sprinkles, chopped nuts or a little sea salt.
Once the chocolate sets, I like to place my truffles in mini cupcake liners for a pretty presentation and to keep them from sticking to each other. Store these in the refrigerator for up to a few days or you can freeze them.
Don’t make these until you are having friends over, going to a party, or plan to take these into the office because they are highly addictive. You have been warned. xo. Emma

I just made these for a Halloween party and they are indeed delicious and adorable! The technique for melting the chocolate is genius and I love the eyeballs!! In case it’s helpful for anyone else, I couldn’t find the Oreo dessert and used Jell-o chocolate pudding instead and it was soo good. I do have a question though – are there any tips for making sure the truffles are easy to remove from the surface they’ve been setting on? I just put the freshly chocolate covered truffles on a non-wooden cutting board to set, but when I went to transfer them to the cupcake liners, the bottom of the truffles were stuck to the cutting board. Had to use a knife to remove them and it was a mess ha. I’m sure there’s some trick I’m missing (non-stick spray or something?), so thought I’d ask!

EDIT: I made another batch and used parchment paper for setting and had NO sticking!! This may have been the obvious choice for most, but it was my first time working with chocolate and didn’t know. Sharing in case it’s helpful & sharing a photo of how cute they turned out!

Oh lovely ! It would have been wonderful for my son’s birthday too ! Unfortunately, I live in France & we don’t have instant cake preparation but I’ll chase the googly-eye sprinkles. Imagine if you offer those cute cakes in a box, when people open it, what a surprise !
My life would be so much better if I had googly eye sprinkles! I’ve been known to draw faces on the eggs in the fridge, so this is right up my alley.
